In my 20% project, I learned on how to cook the basic foods. I wish I would of learned how to prepare other dishes. Though I feel I learned different options of different foods from other Spanish speaking countries. Especially Mexico and Ecuadorian dishes. Eventhough our tech class ended, I will continue adding recipes in addition to videos:) This learning process will never end:)
Just want to share a video of how they make yummy Tijuana Carne Asada Tacos. I had some last weekend and they were very yummy. I had one Carne Asada Taco and one Carne Asada tostada... Delicious:)
I have a friend that lives in Ecuador (South America) that is a professional chef. I asked her to send me some recipes so I can cook Ecuadorian dishes. I followed her instructions, and I feel I did pretty well for the first time of preparing an Ecuadorian dish. I will share the recipe.
Ecuadorian Bistek
Ingredients:
1 lbs thin beef steaks
2 tsp salt
½ tsp of pepper
3 cloves of garlic, crushed
¾ of sweet peppers
Mix the garlic, salt, and pepper to make a paste.
Season the steaks by rubbing a small amount of paste onto both sides of each steak.
Let rest for about 15 minutes
Add sweet peppers while cooking meat.
To accompany this you may add corn or rice. I added corn, and the meal tasted pretty good.
In my Spring Break trip to Mexico, I learned to make Orange Chiffon cake. My aunt has a old recipe book ( about 55 years old), which has great recipes, especially desserts. The actual cake was obviously a round pattern cake, but it was so delicious my family and I ate almost everything, though I had the chance to take a picture of part of it lol. This is how you make it:
In the bowl of the electric mixer, place flour, sugar, baking powder, salt and orange fest. Beat well, and then add egg yolks, vegetable oil, orange juice and vanilla extract. Beat smooth for about one minute.
In a separate bowl which, and then beat the egg whites. Continue to sprinkle sugar and beat. With a wire whisk fold the egg whites into the batter.
Pour the batter into the ungreased pan and bake 325 degrees for about 55 minutes.
After done let the cake cool for about 40 minutes. Then it will be ready to serve.
You may add Icing, but it just tastes great without tooJ
Chimichurri is an Argentinean sauce that can be eaten with bread as an appetizer. It is very delicious. The first time I tried it was at Argentinean Cusine Puerto La Boca, located in Downtown San Diego. I recommend everyone to go. Also, if you travel to Tijuana, a very good Argentinean restaurant I recommend that also has chimichurri is: “Cheripan”.

1 cup Fresh parsley
Cilantro
4 cloves of garlic
2 tablespoons of chopped onion
1 tablespoon of lime juice.
3 tablespoons of olive oil
Salt and pepper
Preparation:
-In blender put garlic and onion
-Add parsley and cilantro
-Blend
-Into a separate bowl add lime juice and olive oil.
-Add salt and pepper

Why I prefer Soy Chorizo. Soy Chorizo is healthier, since it does not have all the fat that pork has. Also , it tastes the same, but without the saturated fat. Also its gluten free. =) Healthy Chorizo without all the fat
I am not a great cook, but I am eager to try my best and learn to make different Spanish Speaking Countries food. This can be snacks, desserts, and much more. I feel this will benefit not only myself but also my future students learn how to make yummy food from different Spanish Speaking Countries.
